MICROWAVE POPULAR CARROT CAKE | |
1 1/2 c. sugar 1 c. oil 1 tsp. vanilla extract 3 eggs 1 1/2 c. unsifted all-purpose flour 1 3/4 tsp. salt 1 1/4 tsp. baking soda 2 1/4 c. raw grated carrots 1/2 c. chopped walnuts In large bowl blend sugar, oil, vanilla, and eggs; beat well. In small bowl stir together cinnamon. Add to sugar-egg mixture and mix in. Fold in carrots and walnuts. Pour batter into greased 16-cup plastic fluted tube dish. Microwave at medium high (7) 18-20 minutes, rotating dish 1/4 turn every 6 minutes. Let stand directly on heat-proof counter or wooden board to cool. CREAM CHEESE FROSTING: 1 lb. pkg. confectioners sugar 1 (8 oz.) pkg. cream cheese 6 tbsp. butter 2 tsp. vanilla extract Place ingredients in 2-quart casserole. Microwave at high (10) for 1 minute just until ingredients can be beaten together. |
