MICROWAVE CARROT CAKE 
1 1/2 c. sugar
1 c. oil
1 tsp. vanilla
3 eggs
1 1/2 c. unsifted flour
3/4 tsp. salt
1 1/4 tsp. baking soda
2 1/2 tsp. cinnamon
2 1/4 c. raw grated carrots
1/2 c. chopped walnuts

In large bowl blend sugar, oil and vanilla. Add eggs and beat well. In small bowl, stir together flour, salt, soda and cinnamon. Add to sugar-egg mixture and mix. Fold in carrots and nuts. Pour batter into greased 12"x8" pan (microwaveable). Microwave on High 13 to 15 minutes rotating dish 1/2 turn every 4 minutes. Let stand directly on heat proof counter to cool. Frost with cream cheese frosting.

Since microwave ovens vary in power, you may need to adjust your cooking time.
