PEACH MELBA CHEESECAKE PIE
(Microwave)
 
1/4 c. butter, melted
1 1/4 c. graham cracker crumbs
2 tbsp. sugar

Add crumbs and sugar to butter (in pie plate). Press into place and micro at Full Power 2 minutes.

Drain and arrange on crumb crust.

Micro in bowl until soft and mix together with: 1/2 c. sour cream 1 egg 1/2 tsp. almond extract

Pour over peaches and micro at Full Power 5 minutes, or until edges are set. Cool on rack then spread 1/3 cup raspberry jam on top. Refrigerate until served. Add a dab of Cool Whip.

Since microwave ovens vary in power, you may need to adjust your cooking time.
