ARROZ CON POLLO 
1 med. onion, cut in sm. pieces
1 lg. tomato, cut in sm. pieces
1/2 green pepper, cut in sm. pieces
1/2 c. ham, cut in sm. pieces
1/8 tsp. garlic powder
1/2 c. split almonds
1 c. chopped celery
3 to 3 1/2 lb. chicken
Enough water to cover chicken
A spoonful of vinegar
6 olives, sliced (green or black)
Salt and pepper
1 1/2 c. long grain rice

Fry onion, tomato, and green pepper in oil; do not use aluminum pan. When partly cooked, add ham, garlic powder, almonds, and celery. Add water, if needed. Cook for a few minutes. Cut in small pieces and brown in oil the chicken. Put in large pan with the above ingredients.

Add enough water to cover chicken, vinegar, olives, salt and pepper. Cook until chicken is almost done. Add 1 1/2 cups long grain rice. Add enough hot water if needed to cook the rice. Garnish with red peppers.
