OVEN FRIED LEMON CHICKEN 
8 broiler thighs, skinned
1/2 c. non-fat lemon yogurt
1/2 tsp. ground ginger
1/2 tsp. garlic powder
1/2 c. whole-wheat bread crumbs

Dip each thigh into a mixture of yogurt, ginger and garlic powder; then coat lightly with bread crumbs. Place in a single layer in a non-stick baking pan.

Bake in a 350 degree oven for 35 minutes or until chicken is tender and coating is crisp. Serves 4.
