RED SNAPPER FILLETS, FLORIDA
STYLE
 
1 1/2 lbs. red snapper fillets
Salt
Freshly ground pepper
A few gratings of nutmeg
1 1/2 tsp. grated orange rind
1 tsp. grated grapefruit rind or a combination of lemon & lime

Preheat the oven to 400 degrees. Put the fillets in a lightly greased baking dish. Sprinkle them lightly with salt and pepper and nutmeg and distribute the grated rinds on top. Cover with foil and bake 15 minutes.
