OATMEAL MUFFINS 
1 c. quick cooking oats, uncooked
1 c. buttermilk
1 c. light brown sugar
1 egg, slightly beaten
1 3/4 c. flour
1 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. mace
1/2 tsp. grated lemon rind
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. cloves
1/2 c. vegetable oil

Combine oats and buttermilk in a large bowl, let stand for one hour. Add sugar and eggs; mix well. Combine the dry ingredients and stir into oat mixture. Stir in oil and lemon rind. At this point 1/2 cup raisins or chopped dates may be added if desired. Spoon into greased muffin tins. Bake at 400 degrees for 20 minutes.

Makes about 1 1/2 dozen.
