ANYTHING GOES QUICHE | |
1 (9 inch) unbaked pie shell 8 slices bacon, cooked, drained and crumbled Or 1/2 c. diced ham or 7-8 oz. shrimp or crabmeat 3 beaten eggs 1 1/2 c. milk 1 tbsp. flour Dash of nutmeg 1 1/2 c. shredded Swiss cheese 1/2 c. shredded Monterey Jack, Mozzarella or Cheddar cheese Bake pastry shell until nearly done. Remove from oven. Set oven at 325 degrees. (Pastry must be hot when filling is added; do not bake ahead of time.) In a bowl, stir together eggs, milk, flour, salt and nutmeg. Stir in bacon or whatever and cheeses; mix well. Pour into warm pastry shell. Cover the edges of crust with foil to prevent overbrowning. Bake at 325 degrees for 35-40 minutes or more until knife inserted just off center comes out clean. Let stand 5-10 minutes before serving. Can be baked ahead of time and reheated at 325 degrees for 30 minutes. |
