PEANUT BUTTER COOKIES 
1/2 c. granulated sugar
1/2 c. packed brown sugar
1/2 c. shortening
1/2 c. peanut butter
1 egg
1 1/4 c. all-purpose or whole wheat flour
3/4 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
Jelly or jam

If using self-rising flour, omit baking soda, baking powder and salt.

Mix sugars, shortening, peanut butter and egg. Stir in flour, baking soda, baking powder and salt. Cover and refrigerate at least 3 hours. Heat oven to 375 degrees.

Shape dough into 3/4 inch balls. Place 2 inches apart on ungreased cookie sheet. Bake until set but not hard, about 10 minutes. Cool slightly before removing from cookie sheet; cool completely. Put cookies together in pairs with jelly. About 4 1/2 dozen sandwich cookies.
