PERFECT SPICE CAKE 
2 1/4 c. flour, sifted
1 tsp. baking powder
1 tsp. salt
1 tsp. ground cinnamon
3/4 tsp. ground cloves
1/16 tsp. pepper
3/4 tsp. baking soda
3/4 c. shortening
1 c. sugar
3/4 c. brown sugar, firmly packed
3 eggs
1 tsp. vanilla
1 c. sour milk

Sift together flour, baking powder, salt, cinnamon, baking soda, cloves and pepper. Set aside. Cream together shortening and sugars in bowl until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Add dry ingredients alternately with sour milk, beating well after each addition. Pour batter into 2 greased and floured 9-inch round cake pans. Bake at 350 degrees 25 minutes or until cake tests done. Cool in pans on racks 10 minutes. Remove from pans, cool on racks. Spread top of one layer with Sea Foam Frosting. Place second layer on top; spread with frosting. Frost sides and top of cake.

SEA FOAM FROSTING:

2 egg whites
1 1/2 c. brown sugar, firmly packed
1/3 c. water
1 tsp. vanilla

Combine egg whites, brown sugar, water and vanilla in double boiler top. Place over simmering water. Cook for 7 minutes, beating with electric mixer until soft peaks form. Remove from heat.

Just made this cake for my husbands birthday. I used butter rather than shortening. I didn't think it was spicy enough so I increased the spices to: 2 tsp. cinnamon, 1 tsp. cloves, 1 tsp. nutmeg, and 1 tsp. ginger and was very pleased with the results. It has a nice moist fine crumb. It was delicious and there were no leftovers, unfortunately as I was hoping to have a piece for lunch this afternoon.
