CHEESE SNACK 
1 lb. "Rat Cheese" (longhorn or cheddar) grated on small part of grater
1 (6 oz.) pkg. of Philadelphia cream cheese
2 cloves of garlic mashed to mush
1 c. finely chopped pecans (walnuts maybe substituted)
Paprika and cayenne pepper

Have cream cheese at room temperature, mix with grated cheese, stir in nuts and garlic. Roll on smooth surface to make a roll like ice box cookies. Roll in a mixture of equal parts paprika and cayenne pepper to coat outside. Chill in refrigerator. Slice and serve between favorite crackers.
