CHOCOLATE MOUSSE 
1 (6 oz.) pkg. (1 c.) semi-sweet chocolate morsels
3 eggs, separated
1/4 c. water
1/8 tsp. salt
1/3 c. firmly packed brown sugar

Melt chocolate morsels over hot (not boiling) water. Remove from heat. Add egg yolks, one at a time, beating well after each addition. Add water, beat until smooth.

In a small bowl, combine egg whites and salt; beat until soft peaks form. Gradually beat in brown sugar and continue beating until stiff, glossy peaks form. Gently fold in chocolate mixture. Chill in refrigerator several hours or until ready to serve.
