LEMON CHINESE CHICKEN 
1/3 c. lemon juice
2 tbsp. reduce sodium soy sauce
2 tbsp. Dijon or spicy brown mustard
1 tsp. vegetable oil
1/8 tsp. cayenne pepper
2 skinned or boned chicken breasts, about 1 lb., cut into 3/4 inch cubes

In medium sized bowl, combine lemon juice, soy sauce, mustard, vegetable oil, and pepper. Add chicken and toss well. Cover and refrigerate overnight or at least 1 hour, tossing occasionally.

Preheat the broiler and lightly grease the broiler pan rack. Place chicken on rack 1 inch apart and broil 4-5 inches from heat for 7 minutes, brushing once with soy sauce mixture halfway through cooking. Turn chicken and broil 8 minutes longer, again brushing with soy sauce mixture halfway through. Makes approximately 24 chicken morsels.
