APPLE CAKE 
1 1/4 c. cooking oil
3 eggs
2 c. sugar
3 c. all purpose flour
1 tsp. salt
1 tsp. baking soda
2 tsp. vanilla
3 c. diced raw apples, peeled (use tart apples)
1 c. chopped black walnuts or (pecans with 1 tsp. black walnut flavoring)
1 c. raisins

Blend oil, sugar, slightly beaten eggs, salt, soda and vanilla. Add flour, fold in apples, nuts and raisins. Bake at 325 degrees for 1 hour at 45 minutes. (Cake will be very heavy.)

FROSTING:

2 or 3 c. powdered sugar
1 tbsp. milk
2 tsp. vanilla
2 tbsp. butter
1/4 salt

Mix powdered sugar with a small amount of milk and add butter, vanilla, salt. Add more milk if necessary to make a smooth frosting.

If a not so sweet frosting is desired, substitute 1 cup flour for one of the cups of powdered sugar.
