MINUTE CHICKEN | |
4 lbs. lean de-boned chicken 1/2 c. vegetable oil Chinese parsley for garnish MARINADE: 3 tbsp. flour 2 cloves garlic 1 tbsp. sugar 1/4 c. Hoisin sauce 1/2 c. green onions, minced 1/2 c. chicken stock 1/4 tsp. black pepper 2 tbsp. oyster sauce 2 tbsp. dry sherry 2 tsp. grated ginger Combine all marinade ingredients and mix well. Cut chicken into bite- size pieces and marinate for at least 15 minutes. Heat oil in wok over high heat, then stir-fry for about 2 minutes while chicken sizzles. Lower heat and add the marinade. Cook for 5 to 6 minutes longer. Remove to serving platter and garnish with parsley. Serve hot. COMMENTARY: This dish is universally enjoyed, and if done correctly, becomes a favorite. It is easy to do and really does not take very much time to prepare. |
