MATZOS KLOESE, NO. 1 | |
2 matzos or 1 c. soaked wheat bread 2 tbsp. fat (Goose) 2 eggs 1/4 onion, chopped fine 1 tsp. parsley, chopped 1/2 c. matzos meal or 3/4 c. cracker meal 1 tsp. salt 1/8 tsp. pepper 1/4 tsp. ginger 1/8 tsp. nutmeg Soak the matzos a few minutes in cold water and then drain and squeeze dry. Heat the fat in a spider, add the onions. Fry to a golden brown, then add the soaked matzos. Stir until it leaves the spider clean, then add seasoning, the egg (beaten slightly). Shape into balls the size of a walnut. Drop into boiling soup 15 minutes before serving. Test one in boiling water and if it boils apart add more meal. (Spider is a heavy cast iron frying pan.) |
