APPLE GLAZED CARROTS 
1/4 tsp. nutmeg
3 tbsp. honey
1/2 stick butter
3 med. to lg. apples, peeled, cored and chopped
6 to 8 med. carrots

Melt butter in a heavy saucepan. Add apples, cover tightly and cook over medium heat until thoroughly softened. You do not need any water. Cover and cook until carrots are crisp soft. Just before serving, stir in honey and nutmeg and heat to boiling.
