ZEE'S POPPY SEED CHICKEN 
2 pkgs. boned chicken breast
2 cans cream of chicken soup
2 sm. containers of sour cream
1 strip Ritz crackers
1/4 lb. butter
1 tbsp. poppy seeds

Clean chicken removing all fat. Spray a 9 x 13 inch pan or casserole with Pam. Cut chicken into bite size pieces. Place in casserole or pan. Mix soup and sour cream together. Pour over chicken.

Remove crackers from strip - put into a plastic bag and crush - until fairly small (not powder). Melt butter. Place crackers, butter and poppy seeds in a bowl and mix until all crumbs are moistened. Put crumbs over top of casserole. Bake in a 350 degree oven for 1hour.

Serve over rice. (We have a green vegetable with this. (NOTE: You can also use one can of soup and one container of sour cream. Serve on your plate with mashed potatoes and a vegetable).
