GREEN BEANS WITH GARLIC & DILL | |
2 lb. green beans 1/2 tsp. salt 1/4 tsp. pepper 1/4 tsp. dry mustard 2 tbsp. olive oil 2 tbsp. lemon juice 8 sprigs fresh dill, chopped 2 cloves garlic, pressed Blanch beans in boiling salted water for about 5 minutes or until cooked but still crisp. Rinse immediately in cold water. Chill. In a small bowl combine salt, pepper, mustard, oil, lemon juice, dill and garlic. Beat well with a whisk. Pour over beans and marinate for 1 hour before serving. Serve cool, but not cold. Serves 8. If making dressing far ahead of time, leave out garlic until just before serving. |
