DELMONICO POTATOES 
3 tbsp. butter
3 tbsp. flour
3/4 tsp. salt
1/4 tsp. pepper
2 c. milk
1/2 c. grated cheese
2 hard boiled eggs
4 med. cooked potatoes

Make a paste of melted butter, flour, pepper and salt. Add hot milk gradually, stirring constantly. Cook until creamy. Have ready the cheese, eggs and potatoes. Put these into buttered dish in alternate layers (potatoes, cheese, eggs, potatoes, cheese and bread crumbs). Spreading each layer with a little of the sauce. Cover top with buttered crumbs and bake until well browned. About 1/2 hour.
