4 large potatoes cut in small cubes. Add just enough water to cover. Bring to boil - turn heat low and cook for 10 more minutes. Do not let them get mushy. Turn out on plate to cool.
Melt 2/3 stick of butter. Stir enough flour to make a thick paste. Make sure all lumps are smoothed out. Add 1 pint of milk - good pinch of salt and dash of pepper.
When thickened - add 1/4 cup powdered cheese and 2 slices of Old English cheese cut in cubes. Stir until melted. Put potatoes in buttered casserole and pour sauce over them. Cover with buttered cracker crumbs. Bake 15 minutes in 350 degree oven. Turn off and leave in for another 15 minutes. This can be made a day ahead and reheated in 350 degree until it starts to bubble.
