DELMONICO POTATOES 
2 1/2 qts. chopped raw potatoes
2 tbsp. chopped onion
1 stick butter
6 tbsp. flour
4 c. milk
1 c. evaporated milk
3/4 lb. sharp cheese

Melt butter. Add flour and blend. Add milk - stir until thick. Add cheese. Pour sauce over raw potatoes and onion. Bake at 350 degrees for 1 hour. Serves 20.
