DELMONICO POTATOES 
2 tbsp. butter
Speck of pepper
Dash of paprika
1 1/2 c. milk
2 tbsp. flour
1/2 tsp. salt
1/2 tsp. celery salt
12 hot sm. boiled potatoes

WHITE SAUCE: Melt butter in top of double boiler. Then add flour and seasonings, while stirring until smooth. Then add milk slowly, stirring constantly, to avoid lumps. Cook until smooth and thickened. Pour over potatoes. Turn into casserole dish and sprinkle with grated cheese and buttered soft bread crumbs. Bake at 400 degrees until brown.
