KEY LIME PIE
3 eggs, yolks and whites separated
1 (14 oz.) can sweetened condensed milk
1/2 c. lime or lemon juice
Few drops green food coloring (optional)
1 tsp. grated lime peel
1 (9 inch) baked and cooled pastry shell or graham cracker crust shell
1 c. sweetened whipped cream

In medium-sized bowl with electric mixer, beat 3 yolks and 1 egg white until thick and light-colored. Beat in condensed milk, lime juice, and grated lime. Add food coloring if you wish. (In its natural state, Key Lime Pie filling is pale yellow.)

Pour mixture into prepared pie shell. Chill about 6 hours. When ready to serve, spread sweetened whipped cream over filling and garnish with twisted lime slice. This pie also freezes beautifully.
