LASAGNA | |
1 (10 oz.) pkg. Lasagna noodles 1 (16 oz.) can tomatoes 1 (12 oz.) can tomato paste 2 tbsp. Italian seasoning (or 1 tbsp. basil, 1 tbsp. garlic & 8 1/4 tsp. oregano) 1 tsp. salt (or light salt) 1 tsp. pepper 1 (16 oz.) pkg. soft Tofu 1 (16 oz.) pkg. imitation Mozzarella cheese 2 eggs 1 lb. ground turkey or ground beef Preheat oven to 375 degrees. Cook noodles according to package directions. Brown meat in skillet (add 1/4 cup water and cook over medium low heat if using turkey or chicken). Drain fat. Break up tomatoes and add to meat mixture (do not drain tomatoes). Add tomato paste and spices. Simmer for 30 minutes, stirring occasionally. Mix eggs with Tofu. Mix well. Spray a 9 x 12 inch pan with cooking spray. Place about 1 cup of the meat mixture on the bottom of the pan. Next, add a layer of the drained lasagna noodles. Add more meat and sprinkle about 1/3 of the cheese on. Repeat layers finishing with the cheese. Bake at 375 degrees for about 45 minutes. Cool for 5 minutes before serving. Serves approximately 12. For diet conscious people; this recipe made with turkey has no cholesterol and very little fat. |
