MINESTRONE SOUP 
2 lbs. beef bone
4 qts. cold water
1 c. red kidney beans
1/2 c. chopped onions
1/2 c. minced parsley
1 tbsp. olive oil
2 c. shredded cabbage
1 c. green beans
1 c. sliced fresh carrots
3/4 c. peas
1/2 c. sliced zucchini
6 oz. can tomato paste
3 slices bacon, chopped
1/3 c. rice
1/2 c. macaroni
2 tsp. green sage leaves
1/2 tsp. pepper
1/2 tsp. garlic powder
Grated Parmesan cheese

Place soup bone, water, salt and dried beans in a large kettle. Cover and simmer until meat and beans are tender. Remove bones; trim off meat; add meat to stock. Add vegetables, macaroni, bacon, rice and seasonings. Simmer 30 minutes. Serve with grated Parmesan cheese. 16 to 20 servings.
