BANANA PUDDING | |
1 pkg. vanilla flavored pudding and pie filling 2 egg yolks (slightly beaten), save egg whites for meringue 2 1/2 c. milk 25 vanilla wafers 2 lg. bananas, sliced Combine pudding mix, egg yolks and milk in saucepan. Cook and stir over heat until mixture comes to a full boil. Arrange layer of vanilla wafers on bottom and sides of a 1 1/2 quart baking dish. Add a layer of banana slices and pudding. Continue layering wafers, bananas and pudding, ending with pudding. Top with meringue. Bake at 250 degrees to brown meringue abut 10 minutes. MERINGUE: Beat egg whites with 1/2 cup of sugar and 1/2 teaspoon vanilla until stiff. Serves 6. |
