MEXICAN CORNBREAD DINNER | |
1 c. cornmeal 1 c. milk 3/4 tsp. salt 1/2 c. bacon drippings 2 eggs, well beaten 1/2 tsp. baking soda 1 (#303) can cream style corn 1 lb. ground beef Salt & Pepper to taste 3 garlic cloves 1 lg. onion, chopped 1/2 lb. mild cheddar cheese, grated 2-4 canned jalapeno peppers, chopped Mix first 7 ingredients together and set aside. Saute ground beef with salt, pepper and garlic cloves. Drain on paper towel. Grease a large black iron skillet. Heat and sprinkle a very thin layer of cornmeal in skillet and let it brown slightly. Pour half the cornmeal batter in skillet. Sprinkle cheese evenly over batter. Then sprinkle meat, onions and jalapeno peppers. Pour remaining batter on top. Bake 45 to 50 minutes at 350 degrees. Serve with green salad and red beans. |
