CHICKEN CACCIATORE | |
1 (3 1/2 lb.) chicken 1 red or green pepper, sliced (2 if you like peppers) 8 oz. mushrooms, sliced 1 med. onion, sliced 1 clove garlic, chopped 8 oz. can tomato sauce 1/4 c. vegetable oil Heat oil; brown chicken over high heat, about 15 minutes. Remove to pot as it browns. Cut up the peppers, mushrooms, onion and garlic; saute lightly in remaining oil. Add to chicken; add tomato sauce. Cook over low heat until chicken is done, 45-60 minutes. |
