BRAN MUFFINS 
1 c. 100% bran
3/4 c. honey
2 1/2 c. flour
1/2 tsp. salt(less)
2 c. buttermilk
1 c. shortening
2 c. All Bran cereal
2 1/2 tsp. baking soda
2 eggs
Raisins and/or dates

In one bowl combine 100% bran and shortening and cover with 1 cup boiling water. Let stand. In second bowl, combine remaining ingredients, adding eggs one at a time and mixing well. Add to first bowl and mix well. Add raisins/dates. Bake at 400 degrees approximately 12 minutes. 2 1/2 dozen. Can be mixed ahead and stored in refrigerator; stir before placing in muffin tins.
