POTATO FRITTERS 
1/2 c. flour
1/2 tsp. baking powder
3-4 sm. potatoes, peeled

Combine flour and baking powder with water to make a thick batter consistency. Cut potatoes into 1/4" thick slices. Pat them dry with paper towels, then dip in batter. Cook in deep fryer like French fries about 10 to 15 minutes, until brown. Drain. This will easily feed 4.
