POTATOES (MOUSSACA) 
2 1/2 lbs. potatoes
1 sliced onion
2 cloves garlic
1 c. butter
1 lb. minced meat
1 sm. can tomato paste
1 bay leaf
Salt & pepper

Saute onion and garlic with 2 teaspoons butter until soft. Add minced meat. Cook, stirring with a fork to break up the meat. Add tomatoes, bay leaf, salt and pepper. Simmer covered for 45 minutes. Fry the potatoes lightly with the remaining butter.

Arrange layers of potatoes, meat and tomato mixture in a 2 1/2 quart casserole. Finish with a layer of potatoes on top. Add 1 cup hot water, cover and bake in a moderate oven, 350 degrees for 25 to 30 minutes. Serves 5.

NOTE: Cover fried potatoes and meat mixture with 2 cups of Bechamel Sauce, bake in a moderate oven (350 degrees) for 45 minutes. See recipe for Bechamel or White Sauce.
