FRESH STRAWBERRY BREAD 
3 c. flour
1/2 tsp. salt
1 1/2 tsp. baking soda
1 tbsp. cinnamon
2 c. sugar
3 eggs
1 c. oil
2 1/2 c. fresh strawberries or 2 (10 oz.) pkg. frozen strawberries
1 1/4 c. chopped pecans
Red food coloring (optional)

Combine flour, salt, soda, cinnamon and sugar. Make a well in center of dry ingredients; add eggs and oil, stirring only until moistened. Stir in strawberries and pecans. Food coloring, if desired.

Spoon into 2 lightly greased and floured 8-inch loaf pans. Bake at 350 degrees for 1 hour. Let stand overnight before slicing.
