CHICKEN CROQUETTES 
6 tbsp. butter
1/2 c. flour (may need more)
1 c. chicken broth
1 c. milk
Salt & pepper to taste
1 dash of paprika
Make heavy white sauce
Grind chicken or turkey (3 c.), I use my food processor
1 sm. onion, chopped fine

Let sauce cool a little. Mix chicken and onion. Add sauce and mix. Put in refrigerator until very cold (can leave overnight). With wet hands shape into cones or balls. Roll in bread crumbs. Dip in egg (beaten with 2 tablespoons water) then roll in bread crumbs again. Deep fry.

I put cones on a cookie tray until frozen then pack in ziplock bags. They freeze well. I always double or triple this recipe so I can freeze them.
