APPLE SQUARES 
3 c. flour
1 c. shortening
8 tbsp. water
1 tbsp. lemon juice (or 1 tsp. water, 1 tsp. vinegar, 1 tsp. vanilla)
1 tsp. salt
2 egg yolks
Few drops of water

FILLING:

7 or more apples, sliced
1 c. sugar
1 1/2 tsp. cinnamon

TOPPING:

2 egg whites, beaten

Mix all but filling ingredients. Divide dough in half and roll out to fit an 11x15 inch jelly roll pan. Put on pan. Spread with apples, then sprinkle with sugar and cinnamon. Put on top crust. Brush crust with beaten egg whites. Bake 30 minutes at 425 degrees.
