JALAPENO CORNBREAD | |
1 c. cornmeal 1 c. milk 2 eggs 3/4 tsp. salt 1/2 tsp. baking soda 1/2 c. bacon drippings 1 lb. 1 oz. can cream style corn 1 lb. ground beef 1 lg. onion 1 lb. yellow cheese 3 to 5 canned jalapeno peppers (chopped) Combine meal, milk, eggs, salt, soda, bacon drippings and cream style corn. Mix well and set aside. Brown ground beef and drain. Pour half of cornbread batter into well greased iron skillet. Sprinkle grated cheese over batter. Sprinkle meat over cheese. Sprinkle chopped jalapenos evenly over meat. Top with remaining cornbread batter. Bake at 350 degrees about 50 minutes. 1/2 recipe is plenty to cook at one time for 2. Serve with salad for complete meal! |
