BUTTERSCOTCH OATMEAL COOKIES 
1 c. butter
1 3/4 c. firmly packed dark brown sugar
2 lg. eggs
1 tsp. vanilla
2 c. all-purpose flour
2 c. quick oats
1 tsp. baking soda
3/4 tsp. salt
1/4 c. water
1 c. butterscotch morsels
1 c. chopped nuts

Heat oven to 375 degrees. In large bowl beat butter and brown sugar until light and fluffy. Add eggs one at a time, beating well after each. Add vanilla, flour, oats, soda and salt. Add alternately to creamed mixture. Stir in the morsels and nuts. Drop by heaping teaspoons onto a lightly greased cookie sheet. Bake 8-10 minutes until edges are lightly browned.

This turned out great. I halved the recipe, as it was only meant to feed four people. About 5 cookies were gone before I finished baking the dough, and none by me. Instead of butterscotch morsels I used chocolate chips, but would love to try the butterscotch next time. Let these sit on the cookie sheet a minute or two to set and enjoy with a cup of coffee or glass of ice cold milk.
