BUTTERSCOTCH OATMEAL COOKIE 
2 c. shortening
1 1/2 c. brown sugar
1 1/2 c. sugar
4 eggs
2 tbsp. hot water
2 tsp. vanilla
3 c. flour
1 1/2 tsp. salt
2 tsp. baking soda
4 c. quick oats
12 oz. bag butterscotch chips

Combine and cream first 4 ingredients. Add hot water and vanilla. Add remaining and mix well. Drop by teaspoons onto cookie sheet sprayed with Pam. Bake at 375 degrees for 10 to 12 minutes. Nuts could also be added.
