PICANTE SAUCE 
16 c. chopped tomatoes
4 c. chopped onions
2 1/2 c. vinegar
1/2 c. sugar
1/4 c. salt
1 1/2 tsp. chili powder
2 tsp. cumin
2 tsp. black pepper
1 tsp. alum
1 c. hot peppers

Hot peppers - start with 1/4 cup, cook for a while and taste to see if you want more.

Combine everything in a large pot and bring to a boil. Simmer for 3 hours or until as thick as you like.
