LEMON BASIL CHICKEN 
1 c. bread crumbs
1 1/2 tbsp. minced fresh parsley
1 1/2 tsp. grated lemon rind
1 tsp. dried basil
1/2 tsp. salt
1/2 tsp. pepper
3 tbsp. milk
6 (6 oz.) chicken breast halves, skinned
3/4 tsp. lemon juice

Combine first 6 ingredients in a plastic bag, shaking well to mix. Combine milk and lemon juice; brush over both sides of chicken. Place chicken in bag with bread crumb mixture and shake well to coat.

Place chicken on broiler pan coated with a cooking spray. Bake, uncovered 400 degrees for 35 minutes or until done. Garnish with lemon slices and fresh parsley.
