LEMON BASIL CHICKEN 
1 c. bread crumbs
1 1/2 tbsp. minced fresh parsley
1 tsp. grated lemon rind
1/2 tsp. dried whole basil
1/2 tsp. salt
1/2 tsp. pepper
3 tbsp. buttermilk
3/4 tsp. lemon juice
6 (6 oz.) chicken breasts, halved and skinned
Lemon slices
Vegetable cooking spray

Combine the first 6 ingredients in a plastic bag, shaking well to mix. Stir together buttermilk and lemon juice and brush over chicken. Place chicken in bag and shake to coat.

Place chicken in a broiling pan coated with cooking spray. Sprinkle remaining crumbs over chicken. Bake uncovered at 400 degrees for 35 minutes. Garnish with lemon slices.
