MANGO BREAD 
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. sugar
3 eggs, lightly beaten
1 tsp. vanilla
1 c. vegetable oil
2 c. mangoes, diced
1/2 c. walnuts
1/2 c. shredded coconut
1/2 c. raisins

Sift together flour, cinnamon, soda, salt and sugar. In a large bowl, combine the rest of the ingredients and mix well. Add to flour mixture. Lightly butter a loaf pan and bake at 350 degrees for 1 hour.
