PEANUT PATTIES 
6 c. sugar
2 c. water
2 c. white corn syrup
2 lb. (6 c.) raw peanuts
1/4 c. butter
1/4 tsp. salt
4 c. flat coconut

Combine sugar, water and syrup in a large saucepan. Bring to a boil over medium heat. Add peanuts. Cook until candy hardens when dropped in cold water, 242 degrees. Remove from heat, add butter, salt and coconut. Mix well. Add a little red coloring, if desired. Let cool slightly, beat until thick, drop by teaspoons on waxed paper. Makes 6 1/2 to 7 dozen pieces.
