CLAM FRITTERS 
1 pt. clams, chopped and drained
2 eggs
1/3 c. milk
1 1/2 c. flour
2 tsp. baking powder
Salt and pepper to taste

Beat eggs until light. Add milk and stir in flour, baking powder, seasonings and clams. Drop by teaspoonfuls in hot deep fat (375 degrees or until 1 inch cube of bread browns in 1 minute). Dip spoon in hot oil before using. Fritters should be browned on outside, 3-5 minutes. Drain on paper toweling.

Serves 6.

Clams could be fresh or quahogs or canned clams.
