FOOD FOR THE ANGELS 
6 egg whites
1 1/2 c. sugar
1 tsp. vanilla
1 sm. Cool Whip
1 c. coconut
50 Ritz crackers, finely blended
1 c. chopped nuts

Beat egg whites until foamy. Add sugar and vanilla. Beat until stiff peaks form. Fold in finely ground (can use food processor to crush) crackers; and nuts. Bake in 9 x 13 inch pan at 375 degrees for 15 minutes.

When completely cool, spread with Cool Whip and top with coconut if desired. Keep refrigerated.
