OVERNIGHT BUNS | |
Begin at 4:00 or 5:00 p.m. 2 packets yeast 3 c. lukewarm water 1/2 c. shortening 1 tbsp. salt 3/4 c. sugar 2 eggs 12 c. flour (usually 10 1/2 c.) Soak yeast in 1/4 cup lukewarm water (use part of the 3 cups). Combine other ingredients and knead until smooth. Knead down every hour for 4 or 5 hours several times, then shape into buns. Place on well greased baking sheet or in muffin pans, depending upon shape of rolls formed. Brush lightly with melted butter or oil and cover well so they don't dry out. Let stand overnight. Bake in a preheated 350°F early the next morning. These buns freeze very well. |
