LEMON SPONGE PIE 
1 c. sugar
2 tbsp. butter
3 egg yolks
4 tbsp. lemon juice
4 tbsp. flour
1 c. milk
2 egg whites, beaten stiff

Cream sugar and butter; add egg yolks, lemon juice, flour and milk. Add egg yolks last. Pour into uncooked pie shell. Bake at 400 degrees for 10 minutes. Reduce heat to 325 degrees and bake 35 minutes. (A delicious lemon custard with a sponge cake like topping.)
