OLD FASHIONED CHINESE CHICKEN | |
2-3 lbs. chicken pieces Lettuce SAUCE A: 4 tbsp. soy sauce 2 tbsp. honey 1 clove garlic, crushed SAUCE B: 1 tbsp. peanut oil and 1/2 tbsp. sesame oil 2 scallions, chopped 4 slices fresh ginger, minced 1/2 tsp. szechuan peppercorns, slightly crushed 1/4 tsp. crushed red pepper flakes Depending on amount of chicken to be used, bring to a boil 3 cups to 3 quarts salted water. Add chicken and bring to a boil again. Lower heat and simmer covered about 20 minutes. (Do not remove cover). Turn off heat and let sit in hot water about 30 minutes before removing from pan. When cool enough to handle, cut into bite size pieces and refrigerate on bed of lettuce on large platter. Heat Sauce B ingredients and combine with Sauce A. Pour over chicken. May garnish with Chinese parsley (fresh cilantro). |
