BUTTERMILK PANCAKE MIX 
9 c. all-purpose flour
1/2 c. potato flour (optional)
1/3 c. baking powder
1 tbsp. salt
2 tsp. cream of tartar
1/4 c. sugar
1 c. sweet whey powder or instant nonfat dry milk
1 1/2 c. powdered buttermilk
2 c. Crisco

In a very large bowl mix the dry ingredients together. Cut the shortening into the dry ingredients just as you would for biscuits. Store mix in a tightly covered container.

For pancakes:

3 c. buttermilk pancake mix
2 eggs
2 c. water

Place ingredients in a large bowl and mix well.
