ASPARAGUS WITH LEMON BUTTER 
3 lbs. fresh asparagus, trimmed
1/4 c. fresh lemon juice
Salt and freshly ground pepper
1 c. unsalted butter, cut into 16 pieces, softened

Steam asparagus until crisp-tender, about 5 minutes. Arrange onto a platter. Meanwhile, bring lemon juice to a simmer in a heavy medium saucepan over low heat. Gradually whisk in the butter 1 piece at a time. Season with salt and pepper. Pour lemon butter sauce over the asparagus. Serve immediately.
